Chickpea, Herb & Bulghur Salad

Salad can be divisive. Or worse, boring. But the old saying 'nobody ever makes friends with salad' does not apply here. The rich capsicum dressing in this Chickpea, Herb & Bulghur Salad will change minds and win hearts.


The other great thing about this salad is that it's super versatile. You can use whatever you have. No bulghur? Sub in brown rice (although I really do recommend you at least try the bulgur, it's delicious and really affordable). Don't like chickpeas? Leave them out, use a different legume, or slice up some lean meat. Likewise the herbs are interchangeable. Use whatever is in the fridge, or even better, your garden.


Serve this salad on its own, with your favourite main or bring it to your next barbecue for legendary salad status. However you eat it ENJOY!
